Ingredients & Prep

   260 g  butter unsalted & melted (just warm not hot)
   4 egg yolks
   2 tsp  lemon juice
   2 tsp  water
   1 tsp  white wine vinegar
   2 pinch  cayenne pepper
   to taste  Salt


  Step 1
Melt butter in a saucepan or in a glass jug in a microwave oven until melted but not boiling.
  Step 2
In a metal of glass bowl whisk the egg yolk with water & vinegar.
  Step 3
Place a saucepan on the lowest heat possible, place the bowl on top of the hot water (water must NOT touch the bottom of the bowl, then with a whisk slowly add the melted butter into the bowl whisking hard all the time (if it curdles start again, but slower with the butter) until you have used all the butter.
  Step 4
Take off the heat & add lemon juice & cayenne pepper, if to thick add some more lemon juice or water or both to your taste.

Suggestion & Tips

Great with asparagus, eggs, fish.
