Ingredients & Prep

   4 tbsp  onions med thinly sliced then finely chopped
   200 g  crème fraiche or cream cheese
   120 g  Greek yogurt full-fat
   3 tbsp  dry sherry
   60 g  butter unsalted
   1 tbsp  fresh chives finely chopped
   1 tsp  fresh thyme leaves only no stalks
   1/2 lemon zest only
   1/2 tsp  salt
   1/2 tsp  freshly ground black pepper


  Step 1
Heat a frying pan on a med heat & add onion, butter & salt, stir & & fry until rich golden brown.
  Step 2
Add sherry & thyme to the pan & reduce sherry by 3/4, remove from the heat & allow to cool.
  Step 3
Add crème fraiche, yogurt, pepper, half the chives & lemon zest, mix all together & let it stand for half an hour, pour into a serving bowl & sprinkle over the remaining chives.

Suggestion & Tips

Great with toasted French bread.
