Red wine vinegar

Tomato puree
1 Banana shallot chopped
1 Tangerine juice & zest
1 Garlic clove chopped
1 tbsp
Black treacle
1 tbsp
Tamarind paste
1 Anchovy fillet chopped
1 tsp
Chipotle paste
1 Star anise
1/2 tsp
Chilli powder
1/2 tsp
Fresh thyme leaves
1 pinch
Ground clove
1/2 tsp
Salt
1 tbsp
Veg oil
Method
Step 1
Place oil, shallot, star anise & garlic into a saucepan & place over a med heat & cook for 1 minute until just coloured, then add chilli powder, ground clove & anchovy stir in then add water, vinegar, treacle, sugar, resins, tamarind, chipotle paste, tangerine juice & zest, tomato puree, thyme & salt.
Step 2
Stir & bring to a simmer of 10 mins.
Step 3
Remove from the heat & allow to cool, then remove star anise & blitz using a hand/stick blender blitz until smooth or place in a food processor & blitz smooth.
Suggestion & Tips
Good with roast Pork too.
