Ingredients & Prep

   16 Hard boiled & peeled quail eggs cut in 1/4s
   1/2 Cucumber thinly sliced
   8 Large radishes thinly sliced
   1/2 Red onion finely sliced
   1 Head of lettuce
  Pickling Liquid
   150 ml  Cider vinegar
   50 ml  Water
   2 tbsp  Caster sugar
   2 tbsp  Fresh dill chopped
   1/2 tsp  Salt

Method

  Step 1
Place cucumber, radish, dill & onion in a bowl
  Step 2
Place Vinegar, water, caster sugar & salt in a saucepan & bring to the boil, then pour over cucumber radish & onion mix, cover & set aside for 30 mins to cool.
  Step 3
Place Lettice leaves on a plate, then lay over pickled veg & egg quarters.

Suggestion & Tips

You can use a little of the cold pickling liquid to dress the lettuce leaves if you like.
