Ingredients & Prep

   180 g  Quinoa
   250 ml  Water
   320 g  Black beans tinned drained weight
   160 g  Sweet corn tinned drained weigh
   1 Avocado chopped
   2 Fresh Med Tomatoes finely chopped
   2 Garlic cloves finely grated
   1 Chilli large mild finely chopped
   1 Veg stock cube or gel pot
   1 tsp  Chilli powder
   1/2 tsp  Ground cumin
   3 tbsp  Fresh coriander chopped
   1 Lime juiced
   1/2 tsp  Freshly ground black pepper
   2 tbsp  Olive oil

Method

  Step 1
Heat a good sizes lidded frying pan over a med heat, then add oil, garlic & chopped chilli, stir & fry for 1 minute.
  Step 2
Next add Quinoa, water, stock cube stir until stock cube has dissolved, then add black beans, sweet corn, tomatoes, chilli powder, cumin & black pepper, stir then cover on a low heat & cook for 20 mins or until all the liquid has almost been absorbed.
  Step 3
Take off the heat & add lime juice, chopped avocado & coriander, stir in & sever.

Suggestion & Tips

Can be eaten cold but best warm.
