Ingredients & Prep

   800 g  Chicken breast cut across into 1 cm slices
   400 g  Cooked noodles of choice
   250 g  Cucumber large dice
   200 g  Red cabbage finely sliced
   4 Spring onions finely chopped
   25 g  Fresh Coriander chopped
   10 g  Fresh mint chopped
  Marinade
   135 g  Red miso paste
   60 ml  Mirin
   60 ml  Sake
   3 tbsp  Thai sweet chilli sauce
  Dressing
   3 tbsp  Light soy sauce
   50 ml  Groundnut oil
   40 ml  Rice wine vinegar
   2 tbsp  Tahini

Method

  Step 1
Place marinade ingredients into a bowl & whisk, then add chicken slices & coat sides, cover with cling film & leave at room temperature for 1 hour.
  Step 2
Pre-heat grill to 180°C.
  Step 3
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
  Step 4
Place cooked noodles, cucumber, red cabbage, spring onion & fresh herbs in a bowl, dress with the dressing by mixing al together
  Step 5
Place chicken slices on a grilling rack, place under the grill for 8 mins a side or until light golden brown & cooked, keep you eye on as not to catch & blacken.
  Step 6
Place the dressed salad on serving plated & lay over cooked chicken slices.

Suggestion & Tips

Salmon would work well. Good for the barbeque.
