Ingredients & Prep

   500 g  New potatoes cooked & cut into 1/4s
   350 g  Mayonnaise
   4 Eggs hardboiled cut into 1/4s
   1 Pickled gherkin finely chopped
   2 Banana shallots finely chopped
   1 tbsp  Dijon mustard
   1 tbsp  Lemon juice
   30 g  Fresh chives finely chopped
   1/2 Smoked Paprika
   1/2 tsp  Salt
   1/2 tsp  Freshly ground black pepper

Method

  Step 1
In a bowl add mayo, mustard, lemon juice, paprika, chives, gherkin, chopped shallot salt & pepper & mix together.
  Step 2
Next add in potato & egg, fold all together, place in a serving bowl.

Suggestion & Tips

Best eaten just warm.
