Ingredients & Prep
240 g
Parma ham slices
4 Ripe figs cut in quarters
240 g
Gorgonzola cheese crumbled
300 g
Rocket leaves
Glaze
200 ml
Balsamic vinegar
50 g
Runny honey
Dressing
3 tbsp
Extra virgin olive oil
1 tbsp
Red wine vinegar
1 tsp
Dijon mustard
1/4 tbsp
Freshly ground black pepper
2 pinch
Salt
Method
Step 1
Place balsamic vinegar & honey into a saucepan over a low to med heat, simmer stirring often t& reduce by 3/4 until thick, then set aside to cool.
Step 2
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
Step 3
Place rocket leaves in a bowl & pour over dressing, mix together, then place equally on each serving plate.
Step 4
Place on the dressed rocket the ham, cheese & fig quarters on each plate, then drizzle over the balsamic glaze.
Suggestion & Tips
Any cured ham works well.
