Ingredients & Prep

   300 g  Kale stalks removed chopped
   300 g  Brussels Sprouts finely sliced
   120 g  Toasted Almond halves
   80 g  Dried Cranberries
   20 g  Fresh chives finely chopped
   3 tbsp  Extra virgin olive oil
   1 Lemon juiced
   1 tsp  Dijon mustard
   1 tsp  Agave or Maple syrup
   1/4 tsp  Freshly ground black pepper
   2 pinch  Salt


  Step 1
Blanch the sprout & kale in boiling salted water for 1 minute, drain in a colander, set aside to cool.
  Step 2
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
  Step 3
Place almond in a dry frying pan over a med heat & toss the almond until light brown, tip into a good sized bowl.
  Step 4
Place kale, sprouts, cranberries, chives & roasted almonds, then pour in dressing & mix al together with your hands then tip into a serving bowl.

Suggestion & Tips

You can use roasted pine nut if you prefer.
