Ingredients & Prep

   400 g  Halloumi cut into slices
   4 Ripe figs sliced
   120 g  Rocket leaves
   2 Spring onions finely sliced
   1 tbsp  Flour
   1 tsp  Smoked paprika
   1/4 tsp  Freshly ground black pepper
   2 tbsp  Olive oil for frying
   3 tbsp  Extra virgin olive oil
   1 tbsp  Red wine vinegar
   1 tsp  Honey runny
   1/4 tsp  Freshly ground black pepper
   1 pinch  Salt


  Step 1
Pre-heat oven to 180°C fan.
  Step 2
Place fig slices on either greaseproof paper or on a silicon mat/s on a baking sheet & roast for 8 to 10 minutes until just soft, set aside when done.
  Step 3
Mix flour with paprika & pepper then coat halloumi slices, heat a frying pan on a med heat with the oil & fry on both sides until golden brown, add to the figs in a very low oven to keep warm.
  Step 4
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
  Step 5
Place rocket & spring onion in a bowl & mix with the dressing, then place on a platter, then lay over warm fig & halloumi slices.

Suggestion & Tips

You can add some diced melon with this recopy if you fancy.
