Ingredients & Prep
4 Chicken breasts skinless
150 g
Crusty bread cut into 2 cm cubes
2 Garlic cloves finely grated
2 Romaine lettuce head
16 Cherry tomatoes cut in half
1/2 tsp
Freshly ground black pepper
1/4 tsp
Salt
5 tbsp
Olive oil for frying
Caesar Dressing
4 tbsp
Mayonnaise
3 Anchovy ?llets in oil chopped
3 tbsp
Water
1 tbsp
Lemon juice
1 Garlic clove roughly chopped
20 g
Parmesan cheese, ?nely grated
1 pinch
Freshly ground black pepper
Method
Step 1
Place anchovy, water, garlic & lemon juice in a mini food processor & blitz to a smooth paste, tip into a bowl & mix in mayo, cheese & black pepper, set aside.
Step 2
Place a frying pan on a med to low heat, season the chicken with salt & pepper, add oil, garlic & chicken & fry for 15 mins turning every few minutes.
Step 3
Arrange the lettuce & tomatoes on a serving platter.
Step 4
When chicken is cooked remove to rest for 5 mins then in the same pan add the bread cubes & toss & fry until crispy, remove & place on kitchen paper.
Step 5
Slice chicken into strips at an angle then lay over lettuce & tomatoes, then scatter over croutons & parmesan shavings, drizzle over dressing or put into separate bowls so diners can add themselves.
Suggestion & Tips
Best eaten while chicken is still warm.
