Ingredients & Prep

   600 g  New potatoes
   500 g  Sirloin steaks
   200 g  Roasted red pepped in oil drained (keep)
   2 Garlic cloves finely chopped
   200 g  Rocket & baby leaf salad bag
   2 tbsp  Olive oil for frying
   1 pinch  Salt
   1 pinch  Freshly ground black pepper
  Dressing
   4 tbsp  Extra virgin olive oil
   2 tbsp  Balsamic vinegar
   1 tbsp  Lemon juice
   1 tsp  Runny honey
   1 tsp  Dijon mustard
   1/2 tsp  Freshly ground black pepper
   1/4 tsp  Salt

Method

  Step 1
Boil the potatoes in salted water for 20 mins or until cooked, drain in a colander & leave to cool, when cool cut in half.
  Step 2
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
  Step 3
Rub the beef with the garlic, a pinch of salt & pepper & set aside.
  Step 4
Place a frying pan on a med heat then add a good glug of olive oil & fry the potatoes on both sides until golden brown, when done place on some kitchen paper to soak oil then set aside.
  Step 5
Pour away most of the oil & fry stakes to you liking, remove & allow to rest for 5 mins then slice thinly on a chopping board.
  Step 6
Place cooled fried potatoes in a saving bowl, in another bowl add salad leaves & dress, then layer over the top of the potatoes, then cut peppers into strips, & lay over the leaves & do the same with the beef slices.

Suggestion & Tips

I like to add some thinly sliced red onion in the salad as well.
