Ingredients & Prep
4 Chicken breasts cut into strips
8 Streaky bacon rashers
2 Avocado ripe & sliced
200 g
Baby leaf salad bag
2 Garlic cloves finely chopped
1 tbsp
Olive oil
Dressing
4 tbsp
Extra virgin olive oil
2 tbsp
Balsamic vinegar
1 tbsp
Lemon juice
1 tsp
Runny honey
1 tsp
Dijon mustard
1/2 tsp
Freshly ground black pepper
1/4 tsp
Salt
Garnish
sprinkle
Almonds chopped
Method
Step 1
Place a frying pan over a med heat & fry off the bacon rashers until crispy, remove from the pan & set aside, next add in garlic & fry off for 1 minute then add chicken & cook for 12 to 15 min until cooked through, turn off the heat place bacon back into the pan to warm.
Step 2
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
Step 3
Next put salad leaves in a serving bowl & dress to salad with dressing, us your hands to mix in, retain a little of the dressing for later.
Step 4
Next lay the chicken & bacon & avocado slices over the dressed salad leaves & garnish with the nuts then drizzle over the remaining dressing.
Suggestion & Tips
Best eaten just warm, you can add tomato, spring onion etc if you wish.
