Ingredients & Prep

   800 g  New potatoes cooked & cut into 1/4s
   6 Bacon rashers grilled & chopped
   150 g  Sour cream
   150 g  Mayonnaise
   2 tsp  Dijon mustard
   4 Spring onions finely chopped
   2 Celery stick finely chopped
   1 Pickled gherkin finely chopped
   20 g  Fresh chopped chives
   1/2 tsp  Freshly ground pepper
   1 pinch  Salt


  Step 1
In a bowl add sour cream, mayo, mustard, celery, spring onion, gherkin, chives (keep a little to garnish), salt & pepper & mix well.
  Step 2
Add potato & bacon & fold all together, place on serving bowl.

Suggestion & Tips

Can be eaten cold but best warm.
