Ingredients & Prep
800 ml
Coconut milk full fat
120 g
Golden syrup
1 tbsp
Arrowroot powder
1 Vanilla pod
1 pinch
Salt
Method
Step 1
Place a little of the coconut milk in a saucepan, then add arrowroot powder & mix, then add the rest of the coconut milk, golden syrup, salt, then cut the vanilla pod in half lengthways & scrape out seeds from both half with a sharp knife & add to the coconut milk together with the empty pod halves.
Step 2
Place pan over a med heat & stir until it start to simmer, take off the heat & let it sit until its room temperature, then place pan in the fridge to chill.
Step 3
Remove the vanilla pod halves & pour into ice cream maker & churn until frozen, tip into plastic lidded container & place in the freezer for at least 3 hours.
Suggestion & Tips
Nice with vegan puddings or with Vegan salted caramel poured over.
