Ingredients & Prep

   400 ml  Coconut full fat
   150 g  Caster sugar
   3 Lemons juiced & zested
   1 tbsp  Agar agar powder

Method

  Step 1
Mix the Agar agar powder with the sugar, then place coconut milk, sugar & Agar agar powder mix in a saucepan over a low to med heat, stir & bring to a simmer for 2 minutes, then add lemon juice & zest, stir & simmer for 1 more minute.
  Step 2
Pour hot posset onto serving jars or bowls, allow to cool then place in the fridge to set.

Suggestion & Tips

You can use all types of fruit juice for this recipe.
