Ingredients & Prep
4 Pears peeled stalks on
600 ml
Port ruby
140 g
Golden caster sugar
4 Star anise pods
2 Cinnamon sticks
1 Orange juice
1/2 Orange peel strips
Method
Step 1
In a deep saucepan just big enough to fit pears standing up, add Port, sugar, cinnamon, star anise & orange peel, then squeeze juice from the orange & add to the pan.
Step 2
Place pan on med heat stir until sugar has dissolved then add pears turn down heat to low & simmer with a lid on for about 25 minutes or until soft (use a cocktail stick).
Step 3
When soft remove pears, rind, cinnamon & star anise pods, turn up the heat & reduce sauce to a syrup consistency , place pears on serving bowls & pour over syrup.
Suggestion & Tips
You can add a few black peppercorns to the pan as well.
