Ingredients & Prep

   250 ml  Milk
   200 g  Golden caster sugar
   100 ml  Lemon juice
   Lemon zest only
   3 Egg yolks only
   3 Egg whites only
   60 g  Butter salted soft
   60 g  Plain flour
   1/2 tsp  Vanilla paste or extract
   sprinkle  Icing sugar


  Step 1
Pre-heat oven to 160°C fan, then heavily grease a baking dish with extra butter.
  Step 2
In a bowl whisk the sugar & butter until light & fluffy with either a food mixer or hand mixer, then add 1 yolk & a 1/3rd of the flour & mix, repeat until all in the mix, then add the milk & mix then the vanilla, lemon juice & zest & mix.
  Step 3
In a very clean bowl whip egg whites to firm peaks, add a 1/3rd of the meringue & fold in with a silicon spatula, then add the rest & fold in carefully.
  Step 4
Place the baking dish into a baking tin/pan then pour in batter into the baking dish, then pour hot water form the kettle halfway up the side of the dish, bake for 45 minutes or until there is no wobble, sprinkle over some icing sugar & serve.

Suggestion & Tips

Eat hot. Nice with whipped cream.
