Ingredients & Prep

   500 ml  Double cream
   150 g  Caster sugar
   2 Lemon juice & zest

Method

  Step 1
Put cream & sugar into a saucepan over a low heat, bring to a simmer for 3 minutes stirring, then remove from the heat & pour into a bowl, allow to cool.
  Step 2
When cream is cold add lemon juice & zest & whisk with either in a mixer or with a hand mixer until soft peaks.
  Step 3
Pour into jars or serving bowls, place in the fridge to serve cold.

Suggestion & Tips

Great with homemade shortbread.
