Ingredients & Prep

   1 Fresh ripe Pineapple
   4 tbsp  Coconut sugar
   1 tsp  Ground cinnamon
   6 Cardamon pods - seeds only
   1 pinch  Salt

Method

  Step 1
Pre-heat griddle pan on a med heat or grill on high.
  Step 2
Place cardamon pods on a chopping board, then with the side of a knife crack open cardamon pod & remove seeds, place seeds into a small pestle & mortar & grind to a powder, mix it with the cinnamon powder & coconut sugar.
  Step 3
Cut Pineapple in lengthways into 8 slices, then with a potato peeler remove the rind, then with a 3cm pastry cutter cut out the hard core.
  Step 4
In a bowl coat the Pineapple slices with the sugar mix & allow to stand for 20 minutes, then re-coat & cook for 3 to 5 minutes until charred on the edges.

Suggestion & Tips

Very nice with vanilla ice cream. Lime zest as a garnish is very nice.
