Ingredients & Prep

   500 g  Rhubarb cut into small chunks
   150 g  Apple desert peeled & chopped
   100 g  Stem ginger in syrup drained weight & finely chopped
   100 g  Stem ginger syrup
   50 g  Butter salted melted
   2 tbsp  Lemon juice
   160 g  Flour plain
   125 g  Butter salted cold
   60 g  Caster sugar


  Step 1
For the crumble, place in a bowl the flour & caster sugar, mix together then place in the fridge to cool.
  Step 2
Pre-heat oven to 170°C fan.
  Step 3
In a bowl add cut rhubarb, apple, chopped stem ginger, syrup, lemon juice & melted butter & mix well & set aside.
  Step 4
When flour & sugar mix is cold grate in half the butter roughly mix with your fingertips, then grate in the rest of the butter, using your fingertips mix until you have a breadcrumb consistency.
  Step 5
Tip rhubarb mixture evenly into a baking dish, then sprinkle over crumble over the top & bake for 25 minutes or until golden brown on top.

Suggestion & Tips

Eat warm with lots of double cream or vanilla ice cream.
