Ingredients & Prep

   500 ml  Double cream
   200 g  Condensed milk
   1 Lemon juiced & zested
   200 g  Digestive biscuits
   30 g  Butter salted melted
  Garnish
   1 Lemon thinly cut into slices
   sprinkle  Caster sugar

Method

  Step 1
Make the base by either putting biscuits into a food processor & blitzing to a course powder or putting into a plastic bag & hitting with a rolling pin to bash up, tip crumbs into a bowl pour in melted butter & mix.
  Step 2
Tip base mixture into a 25cm flan or tart tin, spread out evenly & pat down flat, place in the fridge to set.
  Step 3
In a bowl add cream, condensed milk, lemon juice & zest then with either a food mixer or hand mixer whisk until between soft & firm peaks.
  Step 4
Next tip on base & spread out, coat lemon slices with caster sugar & garnish, place cheesecake in the fridge to chill before eating.

Suggestion & Tips

You can use lime or both.
