Ingredients & Prep

   60 g  Dark 70% chocolate
   60 g  Cadburys Bournville
   3 Egg whites
   3 Egg yolks
   30 g  Butter salted
   tbsp  Caster sugar
   60 g  Fresh redcurrants
   sprinkle  Chocolate grated
   to taste  Whipped cream
   8 Mint leaves


  Step 1
Place both chocolates & butter in a bowl then place bowl over a saucepan with simmering water not touching the bottom, stir until chocolate has all melted, remove from the heat & allow to cool to warm, then stir in egg yolks one at a time.
  Step 2
Next in a very clean bowl add egg whites, whisk using a food mixer or hand electric mixer until soft peaks, then gradually add caster sugar to firm peak stage.
  Step 3
Take a 1/3rd of the meringue & fold in with a silicon spatula into the chocolate egg mixture, then fold in the rest carefully.
  Step 4
Spoon mousse into glasses, then cover with cling film & place in the fridge for at least 4 hours.
  Step 5
When ready to eat remove cling film & Garnish.

Suggestion & Tips

If you like mint you can add a few drops of mint extract.
