Ingredients & Prep

   170 g  Butter unsalted soft
   170 g  Dark chocolate 80%
   170 g  Golden caster sugar
   6 Eggs
   115 g  Plain flour
   50 g  Ground almond
   1/4 tsp  Salt
   dusting  Cocoa powder dusting moulds


  Step 1
Pre-heat oven to 180°C fan, then heavily grease pudding (dariole) moulds to the number or portions selected with extra butter, then dust with cocoa powder & knock out excess.
  Step 2
Place chocolate in a heat proof bowl, then place over a saucepan with simmering water (not touching bottom of bowl), melt & stir.
  Step 3
In a bowl add butter & sugar, whisk in a food mixer or with a hand mixer until light & fluffy then add 2 eggs & a 1/3 of the flour & mix, then add the rest of the eggs, flour & ground almonds & mix, next scrape out melted chocolate with a silicon spatula & fold in well into the mixture.
  Step 4
Pour batter equally into pudding moulds, then bake for 12 minutes, allow to cool for 2 minutes then invert on a serving plate knock to bottom to release, if stuck loosen sides with a thin knife & try again.

Suggestion & Tips

Eat straightaway. Nice with whipped cream.
