Ingredients & Prep
600 g Fresh Mango flesh
400 ml Full fat coconut milk
120 g Fresh Blueberries
150 ml Pineapple juice
80 g Chia Seeds
Place the coconut milk, mango & pineapple juice in a food blender, or processor & blitz smooth.
Pour into a bowl & stir in the Chia seeds, then por into serving jars/glasses or bowls then place in the fridge for an hour to set.
Sprinkle Blueberries over the top.
Suggestion & Tips
You could make a compote by putting Blueberries in a saucepan with a little sugar then heat for a couple of minutes to soften then top.
