Ingredients & Prep
10 White bread slices
400 ml
Whole milk
250 ml
Double cream
220 g
Marmalade
80 g
Butter soft
50 g
Golden raisins
50 g
Golden caster sugar
2 tbsp
Demerara sugar
4 Eggs med whole
2 tsp
Egg yolks only
1/2 tsp
Mixed spice
Method
Step 1
Butter & spread marmalade on the bread, then cut from corner to corner to make triangles, place triangles cut side down into a baking dish in rows.
Step 2
Make the custard, put all the eggs & egg yolks in a bowl with the caster sugar & whisk together, then put milk, & cream in a saucepan & bring to a simmer, pour a 1/4 of the hot milk into the egg mixture & whisking as you go Then 1/2 of the milk whisking as you go then the rest of the milk whisking all in.
Step 3
Pre-heat oven to 170°C fan.
Step 4
Pour custard over bread in the dish & set aside for 20 mins to absorb liquid.
Step 5
Sprinkle Demerara sugar over the top, then place dish in the oven for 30 to 40 mins, or until you have a crusty top & the custard has set to a wobble.
Suggestion & Tips
Eat warm with lots of double cream or vanilla ice cream. Apricot jam works well instead of marmalade.
