Ingredients & Prep

   2000 g  Fresh cleaned Mussels
   350 g  Dried Spaghetti
   250 ml  Tomato Passata
   175 ml  White wine
   30 g  Flatleaf parsley finely chopped
   1 Onion finely chopped
   3 Garlic clove grated
   2 tbsp  Tomato puree
   1 tbsp  Fresh basil chopped
   1 tsp  Caster sugar
   1 tsp  Chilli flakes
   1/2 tsp  Freshly ground black pepper
   1/2 tsp  Salt
   3 tbsp  Olive oil


  Step 1
Cook pasta in a salted boiling water as per instructions, heat a large lidded pan over a med heat, add oil onion & garlic, cook until soft 3 to 4 mins.
  Step 2
Next add wine, tomato passata, sugar, chilli flakes, basil, tomato puree, salt & pepper, bring to a simmer, then add mussels lid on & cook for 2 mins, shake mussels & cook for 2 more mins until all mussel shells are open & cooked, remove any closed shells, add parsley & spaghetti shake & stir through & serve.
