Ingredients & Prep
600 g Mushrooms of choice chopped
400 g Fresh egg pasta like tagliatelle
100 ml Double cream
100 g Parmesan, grated
30 g Fresh parsley chopped
60 ml Extra-virgin olive oil
4 Garlic cloves grated
6 Egg yolks
2 Banana shallots chopped fine
1 tsp Black pepper ground
1/2 tsp Salt
sprinkle Parmesan, grated
sprinkle Fresh parsley chopped
Place egg yolks with the cream in a bowl & Whisk together, then add grated Parmesan cheese, mix & set aside.
Cook fresh pasta in salted water to instructions, normally 3 to 4 mins.
Put a pan large enough to contain pasta later on a med heat, add olive oil & mushrooms & fry for 3 to 4 mins, add chopped shallot, salt n pepper & garlic, fry for a further 3 mins stirring often, once cooked add cooked hot pasta, parsley turn heat off then add egg yolk mixture & stir well.
Serve straight away as the pasta will absorb the liquid & make it dry.
Garnish with grated Parmesan & parsley.
Suggestion & Tips
Serve with a nice salad or asparagus or both.
