Ingredients & Prep

   2 Cauliflower
   6 tbsp  Rapeseed oil
   2 tsp  Cumin ground
   1 tsp  Salt
   1 tsp  Black pepper freshly ground
  Sauce
   30 g  Fresh coriander chopped
   30 g  Fresh parsley chopped
   6 tbsp  Red wine vinegar
   1 Garlic clove grated fine
   2 Red chilli large mild finely chopped

Method

  Step 1
Remove leaves from the cauliflower, stan on a chopping board root side down & cut vertically through the middle in half, then cut vertically a slice off each half about 1 inch thick, reserve trimming for another use.
  Step 2
Mix oil, cumin, salt & pepper in a bowl, brush this mixture over the cauliflower.
  Step 3
Make the Chimichurri sauce, mix red chilli, vinegar, garlic, coriander & parsley in a serving bowl & spoon.
  Step 4
Fry the cauliflower in a frying pan on a med heat until just soft, should take 15 to 20 mins, use some of oil use for brushing.
  Step 5
Plate stakes & allow diners to spoon over Chimichurri sauce

Suggestion & Tips

Serve with a nice salad & or fried potato in olive oil & garlic, or veg of choice.
