Ingredients & Prep

   4 Fresh Lobster tails cut in half lengthways
   2 tbsp  Thai fish sauce
   2 tbsp  Lime juice
   1 tbsp  Red curry paste
   1/2 tsp  Shrimp paste
   1 Red Chilli finely chopped
   2 tbsp  Fresh coriander chopped
   4 tbsp  Ground nut oil


  Step 1
Pre heat grill to hot.
  Step 2
Place curry paste, fish sauce, lime juice, shrimp paste, chilli, coriander & oil into a mini food processor or use a stick/hand blender & blitz to a sauce.
  Step 3
Using a pastry brush coat the cut side of the lobster with a the sauce, then place under the grill & cook for 3 minutes, then remove & re-coat the tails with more sauce & cook again for a further 3 to 4 minutes until cooked through.

Suggestion & Tips

Good on there own as a starter as well as a main course with a noodle or rice side.
