Ingredients & Prep

   2000 g  Mussels, cleaned & de-bearded
   120 ml  White wine
   120 ml  Double cream
   4 Garlic cloves finely chopped
   2 Shallots finely chopped
   1 Fennel bulb thinly sliced
   1 Tomato chopped
   60 ml  Ouzo or pernod
   10 g  Fresh basil leaves, torn
   2 tbsp  Olive oil
   1/2 tsp  Salt


  Step 1
Heat olive oil in a medium saucepan over medium heat, stir in shallots & garlic, then cook until soft, stir in fennel & tomato, continue cooking for about 5 minutes.
  Step 2
Add white wine, ouzo, & cream into the pan, bring to a simmer, add mussels & stir, 1/2 the basil, & salt.
  Step 3
Cover saucepan, continue to cook for about 5 minutes, or until the mussels have opened, garnish with remaining basil stir & serve.

Suggestion & Tips

Serve with crusty French bread & or French fries.
