Ingredients & Prep

Pork rib racks cut in 1/2 trimmed & de-sinew
250 ml
Apple juice
Rub
1 tbsp
Smoked Paprika
1 tbsp
Garlic powder or granules
1 tbsp
Onion powder or granules
1 1/2 tsp
Dried thyme
1 tsp
Dried oregano
1 tsp
Cayenne pepper or chilli powder
1 tsp
Salt
1 tsp
Ground black pepper
Barbeque Sauce
350 g
Tomato ketchup
250 g
Black treacle
120 ml
Cider vinegar
120 ml
Apple juice liquor from ribs
80 g
Light brown sugar
1 tbsp
Worcestershire sauce
2 tsp
Dijon mustard
2 tsp
Garlic powder or granules
1 tsp
Tabasco sauce
1 tsp
Ground black pepper
1/2 tsp

Method
Step 1
Mix well all the rub ingredients in a bowl, then sprinkle all the rub into the meat, in a baking tray, cover with foil, leave for at least 2 hour or overnight in the fridge.
Step 2
Pre-heat oven to 140°C fan.
Step 3
Lift up the corner of the foil & pour in apple juice re- seal, place tray in the oven & bake for 2 hours, take out of the oven keep sealed, set aside to cool for 2 hours.
Step 4
Pour off cooking liquor, then make the sauce by putting all the ingredients in a saucepan , bring to a low simmer for 50 mins stirring often.
Step 5
Pre- heat oven temp to 180°C fan.
Step 6
In the baking tray brush sauce over the ribs, then bake for 6 mins in the oven uncovered, remove then recoat with sauce & back in for 4 mins, recoat & serve.
Step 7
Serve some extra barbeque sauce in bowls.
Suggestion & Tips
Serve with buttered corn on the cob, slaw salad & fries.
