Ingredients & Prep

   4 Chicken thighs
   4 Chicken drumsticks
   deep fat fry  Vegetable oil
  Marinade
   500 ml  Buttermilk
   1 tbsp  Cayenne pepper
   2 tbsp  Sriracha hot sauce
   1 tsp  Salt
   1 tsp  Black pepper ground
  Coating
   250 g  Flour self raising
   2 tbsp  Garlic powder
   2 tbsp  Paprika
   1 tbsp  Onion powder
   2 tsp  Cayenne pepper
   1 tsp  Turmeric powder
   1 tsp  Salt
   1 tsp  Black pepper ground

Method

  Step 1
Mix well the marinade ingredients in a bowl, add chicken pieces & leave in the fridge for 2 hours.
  Step 2
Mix well all coating ingredients in a bowl.
  Step 3
Heat oil either in a deep fat fryer or pour at least 5 cm deep in a steep sided pan & heat to 170'c.
  Step 4
Remove the chicken pieces from the buttermilk mixture, shake off excess buttermilk, then dip & completely coat chicken in the coating, shake off excess & lower into the hot oil, for 10 to 12 mins, cook 2 prices at a time, keep warm in an oven at 100'c on kitchen paper until all the pieces are cooked, then turn oven up to 120'c & leave in the oven for 15 mins, then serve.

Suggestion & Tips

If you like it hot add some finely chopped red chilli to the marinade. Serve with fries & coleslaw.
