Ingredients & Prep

Brown rice cooked weight

Broccoli florets
350 g
Firm tofu, cut into pieces
3 tbsp
Cornflour
1 Onion med brown cut into thin wedges
1 Red chilli large mild finely chopped
1 tsp
Garlic powder or granules
3 tbsp
Vegetable oil or groundnut
1/2 tsp
Sea salt
Sauce
3 tbsp
Soy sauce
2 tbsp
Dry sherry or rice wine
2 tsp
Golden caster sugar
1 tsp
Cornflour
Method
Step 1
Dry tofu with kitchen paper, mix the cornflour, garlic powder & salt in a medium bowl. Add the tofu & toss to coat, shake off excess.
Step 2
Heat a wok or large non-stick frying pan over a med heat add oil & fry tofu in batched until golden brown on all sides & set aside
Step 3
Mix well all sauce ingredients together & set aside.
Step 4
Back to the wok/frying pay, fry onions & chilli for a couple of mins, add broccoli & continue to cook for a further 3 to 4 mins stirring often, give sauce a quick re-stir & tip in the pan stirring for 1 min.
Step 5
Warm rice, divide rice into serving bowls top off equally with broccoli mixture & serve.
Suggestion & Tips
You don't have to use the garlic if you wish. You could use other veg of choice.
