Ingredients & Prep
4 Pork chops or shoulder/loin stakes
4 tbsp
Olive oil
Crispy Coating

Breadcrumbs dry panko are good

Parmesan cheese grated
1 Egg beaten
50 g
Flour
2 tsp
Oregano dried or Italian mixed herbs
2 tsp
Garlic granules or powder
1/2 tsp
Salt
1/2 Black pepper
Garnish
sprinkle
Fresh parsley chopped
Method
Step 1
Pre heat oven to 150'c.
Step 2
In a bowl place the flour salt & pepper & mix, in a 2nd shallow bowl whisk the egg, in a 3rd shallow bowl place breadcrumbs, grated Parmesan, herbs & garlic, mix well.
Step 3
Heat a frying pan on a low to med heat, add oil, 1st dip pork into the flour & shake off excess flour, then dip in the egg, then coat all over in the breadcrumb mixture, fry for 5 mins per side until light brown, do them in batches.
Step 4
Place pork chops on a rack (best) or just on a baking tray & cook in the oven for 25 to 30 mins, serve with a sprinkle of parsley.
Suggestion & Tips
You could use chicken or rose veal, serve with fried garlic & rosemary potatoes & a nice salad.
