Ingredients & Prep

   800 g  Cod fillets skin removed cut into chunks
   500 ml  Tomato passata
   400 g  Cooked baby New potatoes
   120 g  Chorizo sausage finely chopped
   100 g  Black olives pitted cut in half
   120 ml  White wine
   1 Onion large finely slices
   1 Fish stock cube or gel pot
   2 Garlic clove finely chopped
   2 tbsp  Fresh flat-leaf parsley chopped
   1 tbsp  Sweet smoked paprika
   1 tbsp  Sherry vinegar
   1 tsp  Caster sugar
   1/2 tsp  Freshly ground Black pepper
   3 tbsp  Olive oil
   sprinkle  Fresh basil


  Step 1
Pre-heat oven to 180°C fan.
  Step 2
Boil new potatoes in salted boiling water for 20 mins then drain & set aside.
  Step 3
Heat a lidded frying pan on a med heat, add oil chorizo & onion, fry until soft, add garlic & fry for another 2 mins, then add paprika stir in then add white wine reduce by half then add passata, stock cube, sherry vinegar, sugar, olives & pepper, bring to a simmer & cook stirring for 3 mins, then stir in the parsley.
  Step 4
Next add cooked potatoes & nestle in the cod chunks into the sauce, place lid on & cook for 15 to 20 mins or until cod is just cooked & flakes, garnish & serve.

Suggestion & Tips

You can add some butter beans with the olives, other white fish works well or maybe add some prawns as well.
