Ingredients & Prep

   600 g  Chicken large thighs skinned & boned chopped in chunks
   1 Onion large finely chopped
   500 ml  Tomato passata
   120 g  Chorizo sausage chopped
   100 ml  White wine
   2 tbsp  Tomato puree
   4 garlic clove finely grated
   2 tbsp  Smoked paprika
   1 Red sweet/bell pepper finely chopped
   1 tsp  Thyme dried
   12 Olives pitted of choice (optional)
   1 Chicken stock cube or gel pot
   1 tsp  Freshly ground black pepper
   3 tbsp  Olive oil for frying


  Step 1
To a frying pan or wok place on a med heat, add oil, onion, chorizo & garlic & fry until onion is soft, then add chicken & red pepper, cook for 3 mins stirring often.
  Step 2
Then add white wine & reduce liquid by half, then add tomato passata, tomato puree, paprika, thyme, stock cube & black pepper, turn heat to low and cook for 20 mins stirring often.
  Step 3
If stew gets dry add a little water to loosen if required, if you are adding olives add then in when 5 mins before the end of cooking time.

Suggestion & Tips

You can add some raw prawns in to if you wish, add 5 mins before the end of the cooking. Have with fried garlic potatoes or rice.
