Ingredients & Prep
800 g
Brisket beef Joint
1 Beef stock cube or gel pot
1 tsp
Black Pepper
3 tsp
Veg oil
24 hour Marinade
400 tbsp
Dark beer
1 Garlic bulb cut in half
1 tsp
Thyme dried
1 Bay leaf
200 g
Carrot peeled & roughly chopped
1 Onion roughly chopped
Method
Step 1
Place marinade ingredients into either a plastic bag (Best) or plastic container small enough so the marinade covers the meat.
Step 2
Place in the fridge & leave to marinate for 24 hours.
Step 3
Take out joint from the marinade & pour it in to a lidded casserole or ovenproof pot with veg, pat dry joint with kitchen paper. Heat a large frying pan, add the oil & brown the joint on all sides.
Step 4
Place the joint in the pot, place on the lid & cook in a pre heated oven at 130'c for 3 hours.
Step 5
Remove joint from the pot & wrap in tin foil to keep warm & to allow to rest for 15 mins before carving.
Step 6
Sieve out veg with a slotted spoon from marinade & discard, add stock cube & black pepper, place pot on the hob on a low heat, stir to dissolve stock cube for the gravy.
Suggestion & Tips
Classic, have with Yorkshire Pudding & Veg of choice. Larger joint will take longer to cook.
