Ingredients & Prep
2500 g
Pork rib racks cut in 1/2 trimmed & sinew removed
1 Carrot chopped
1 Onion med brown chopped
2 Celery sticks chopped
2 Bay leaves
2 Garlic cloves chopped
1 tbsp
Salt
2 tsp
Freshly ground black pepper
to cover
Water
Bourbon BBQ Sauce
240 g
Tomato ketchup
75 g
Dark brown sugar
60 ml
Pineapple juice
50 ml
Cider vinegar
40 ml
Bourbon whisky like JD
1 tbsp
Worcestershire Sauce
25 g
Black treacle
1 tsp
Tabasco Sauce
1/2 tsp
Salt
1/2 tsp
Ground black pepper
Method
Step 1
Place rib 1/2 racks into a lidded saucepan with onion, carrot, celery, garlic, bay leaf, salt & pepper, cover with water put the lid on & place on a low heat, simmer for 3 hours or until meat is soft & tender, when cooked remove & allow to cool & dry.
Step 2
Meanwhile make the BBQ sauce by putting all the ingredients into a saucepan mix with a wooden spoon, bring to a simmer for 15 mins stirring often, when done set aside.
Step 3
In a baking tray or dish place the ribs & coat with the BBQ sauce & leave for 30 mins to marinate.
Step 4
Meanwhile, pre-heat oven to 180°C fan.
Step 5
Place ribs in the oven for 12 mins, then remove & recoat ribs with sauce, then back in for a further 10 mins, then serve with some extra BBQ sauce on the side.
Suggestion & Tips
Serve with buttered corn on the cob, slaw salad & fries.
