Ingredients & Prep

   8 Chicken thighs skin on
   250 g  Chorizo cut into chunks
   750 g  Waxy potato peeled cut into chunks
   1 Red onion sliced
   2 Garlic cloves finely grated
   1 tsp  Dried oregano
   1 Orange zest only
   1/2 tsp  Salt
   1/2 tsp  Freshly ground black pepper
   4 tsp  Olive oil


  Step 1
Par boil potatoes in salted water for 16 minutes or until just soft, drain in a colander & allow to cool to just warm.
  Step 2
Pre-heat oven to 170°C fan.
  Step 3
In a baking tray or dish add the oil, garlic, onion, salt first then add cooked potatoes, chicken & chorizo, mix & coat in the oil garlic mixture, turn chicken skin side up then sprinkle oregano, orange zest & black pepper over the chicken skin.
  Step 4
Place in the oven and bake for 25 to 30 mins until the chicken is cooked.

Suggestion & Tips

Great with a green salad. You can use pork chops instead.
