Ingredients & Prep

   2 Sole, whole prepared skinned
   40 g  Butter salted
   1 Lemon juiced
   2 tbsp  Flour
   1 Garlic clove finely grated
   2 tbsp  Fresh chopped parsley
   1/4 tsp  Salt
   1/4 tsp  Ground white pepper

Method

  Step 1
Heat a frying pan on a low to med heat.
  Step 2
Mix flour with salt & pepper, then put on a plate & coat each side of the fish, add half then butter & garlic to the pan & fry for 30 seconds, then cook fish for 3 to 4 mins per side or until light golden brown, carefully remove fish onto a warm serving plate.
  Step 3
In the pan add other half of the butter, lemon juice (be careful as it will spit) & parsley cook for 30 seconds then spoon over fish.

Suggestion & Tips

Nice with new potatoes & Asparagus.
