Ingredients & Prep

   400 g  Squid cleaned with tentacles
   400 g  Cherry tomatoes halved
   200 ml  tomato passata
   2 Garlic cloves finely chopped
   1 Red chilli finely sliced
   20 g  Fresh basil 
   100 ml  Extra-virgin olive oil 
   100 g  Nduja crumbled or chorizo chopped into small pieces
   25 ml  Rapeseed oil  
   15 g  Fresh parsley chopped
   1 tbsp  Lemon juice
   1/2 tsp  Salt
   1/2 tsp  Black pepper freshly ground

Method

  Step 1
With a knife open out the squid & chop into bite size chunks, remove any membranes that’s left, cut tentacles in half, fry in a non stick frying hot pan using the rapeseed oil for 2 mins constantly stirring or until it starts to colour then set aside on kitchen towel.
  Step 2
Empty oil & replace with olive oil, add Nduja or chorizo & fry for 2 mins on a med heat, add garlic & tomatoes. passata & continue to cook for about 10 mins until the tomato starts to breakdown, then add basil & stir.
  Step 3
Add cooked squid to the pan with salt, pepper, lemon juice & parsley, stir & serve.

Suggestion & Tips

Serve with a nice salad & or fried potatoes or just crusty bread. You can use other shellfish if you prefer.
