Ingredients & Prep

   600 ml  Hot water
   400 g  Fresh mussels cleaned
   400 g  Fresh clams cleaned
   350 g  Fresh squid
   350 g  Raw prawns shells removed
   250 g  Short grain rice
   12 Raw shelled large prawns
   125 ml  White wine
   50 g  Frozen peas
   1 Onion med brown finely chopped
   1 Fish stock cube or gel pot
   4 Garlic cloves grated
   1 tsp  Sweet paprika
   1 pinch  Saffron
   1/2 tsp  Freshly ground black pepper
   3 tbsp  Olive oil


  Step 1
In a jug add hot water, fish stock cube & mix to dissolve, then stir in saffron & set aside.
  Step 2
In a good sized lidded frying pan add the oil, place on a med heat & fry off the garlic & onion until soft then add wine reduce liquid by half, then add rice & paprika, stir to coat rice, then add saffron stock water, mix well & cook for 10 mins with a lid on.
  Step 3
Next remove the lid stir & reduce liquid to just wet if any left, add de shelled prawns, peas, squid & black pepper mix in, then on top place the mussels, clams, shelled prawns then place the lid back on & cook for a further 6 minutes or until the seafood is cooked..
  Step 4
Take off the heat & let it rest for 3 minutes, then serve.

Suggestion & Tips

Garnish with fresh chopped parsley & lemon wedges to make it look good.
