Ingredients & Prep
600 g
Pork shoulder, loin or leg cut to 2cm chucks
300 g
Button mushrooms sliced
180 g
Double cream
200 ml
Water
25 g
Butter unsalted
1 Onion large chopped
1 Chicken stock cube or gel pot
1 Red or green sweet/bell pepper finely chopped
3 Garlic clove finely chopped
1 tbsp
Dijon mustard
2 tbsp
Soy sauce
2 tsp
Dark brown sugar or black treacle
1 tsp
Paprika
20 g
Fresh flat-leaf parsley chopped
2 tbsp
Veg oil for frying
Method
Step 1
In a lidded saucepan or casserole add the oil & over a med/high heat brown the Pork, when done add onion & garlic & cook for 6 mins to soften.
Step 2
Next add paprika & stir in, then add water, mustard, sugar, stock cube & soy sauce, bring to a simmer & cook for 15 mins, covered with the lid on, then add sweet/bell pepper & mushrooms & simmer for a further 15 mins with the lid on, giving it a stir often.
Step 3
Next remove the lid & add butter & cream, bring to a simmer, sprinkle over parsley stir in & its done.
Suggestion & Tips
Good with pasta or mashed potatoes or chips.
