Ingredients & Prep

   800 g  Pork loin cut into 100g slices
   80 g  Maple syrup (real)
   3 tbsp  Balsamic vinegar
   2 Garlic clove finely grated
   2 tsp  Dijon mustard
   1/4 tsp  Chilli powder
   1/2 tsp  Salt
   1/2 tsp  ground black pepper
   1 tbsp  Veg oil

Method

  Step 1
Make the glaze in a bowl, first add the maple syrup, vinegar, chilli powder, garlic, salt & pepper & mix well.
  Step 2
Add oil to a hot frying pan on a med to low heat & fry pork slices for 3 mins per side or until just cooked, you may need to do this in batches so keep cooked pork in a warm oven.
  Step 3
Keep all the pork warm in the oven while making the glaze, to do this add the glaze to the same pan with the juices & reduce glaze by 1/3, then stir in the mustard.
  Step 4
Add the pork back into the frying pan & cook in the glaze for 1 min per side to glaze the pork, do this in batches if necessary (pan size) & keep warm back into the oven until all are done.
  Step 5
Place cooked & glazed pork on a warm serving platter & pour over any remain glaze left in the frying pan.

Suggestion & Tips

This recipe would work with Duck. Nice with potato wedges.
