Ingredients & Prep
4 Large meaty Beef short ribs
to cover
Water
2 Onions med chopped
2 Carrot peeled & grated
400 g
Chopped tin tomatoes
250 ml
Red wine
2 Celery sticks finely chopped
4 Garlic cloves finely chopped
2 tbsp
Tomato puree
20 g
Fresh flat-leaf parsley chopped
2 Bay leaves
2 Fresh rosemary sprigs
2 tsp
Dried oregano
1 tsp
Red Pepper Flakes
1 tsp
Fresh ground black pepper
4 tbsp

Method
Step 1
Heat a large lidded cooking pot over a med heat, add oil & brown the ribs in batches then set aside, next add onion, carrot & celery, fry for 5 mins to soften then to a little colour, stirring often.
Step 2
Place garlic, wine & tomato puree in, stir & cook for 1 minute then put ribs back in & add water to cover then tinned tomatoes, chilli flakes, parsley, rosemary, oregano, bay leaves & black pepper.
Step 3
Cook with the lid on a lowest heat for 2 hours until tender, stir occasionally to stop sauce catching, add more water if it dries out as you need a loose sauce when cooked.
Step 4
Remove bay & rosemary pieces & serve.
Suggestion & Tips
Have with polenta or potato mash.
