Ingredients & Prep
4 Salmon filets skinless 200g each
Marinade
4 tbsp
Dark soy sauce
4 tbsp
Hoisin sauce
2 tbsp
Dark brown sugar
2 tbsp
Shaoshing rice wine or dark Sherry
2 tbsp
Light soy sauce
2 tbsp
Fresh ginger finely grated
1 tbsp
Sriracha chilli sauce
4 Garlic cloves finely grated
1/2 tsp
Chinese five spice
1/2 tsp
Ground black pepper
Cucumber Salad
1 Cucumber med thinly sliced
1/2 Red onion thinly sliced
1/2 De-seeded green chilli finely chopped
4 Spring onions thinly sliced
Dressing
2 tbsp
Rice wine vinegar
2 tsp
Castor sugar
1 tsp
Sesame oil
1 pinch
Cayenne pepper
2 tbsp
Fresh coriander chopped
to taste

Method
Step 1
Mix all the marinade ingredients in a bowl, then marinade the salmon for at least 4 hours in the fridge either in a covered bowl or plastic bag.
Step 2
Place all, salad ingredients in a bowl.
Step 3
Mix the salad dressing in a bowl with a whisk, then pour into salad & mix well & leave for a few minutes before Serving.
Step 4
Grill, fry or bake salmon until cooked to your liking, normally between 4 to 6 mins a side, or 10 mins in the oven, allow to rest for 5 mins before serving.
