Ingredients & Prep

   2 Halibut 200g fillets skin removed
   2 Banana Shallots cut into slices
   6 Vine tomatoes small
   100 g  Green pitted olives (optional)
   120 ml  White wine dry
   2 Garlic cloves grated
   1 tbsp  Capers
   1/2 Lemon juiced
   1/2 Lemon cut into thin slices
   1/2 tsp  Dried Oregano
   4 tbsp  Olive oil
   2 pinch  Salt
   2 pinch  Freshly ground Black pepper


  Step 1
Pre-heat oven to 180°C fan.
  Step 2
Heat a frying pan over a med heat & fry shallot for 3 minutes , then add garlic & fry or 2 mins or until a little colour, then allow to cool to warm.
  Step 3
Take a baking dish & sprinkle cooked shallots over the bottom of the dish leaving as much of the oil in the pan, next sprinkle over capers then place fish fillets on top of the shallot mix layer with the tomatoes & olives.
  Step 4
In the pan of remaining oil add lemon juice, wine & oregano whisk together then tip over the fish & tomatoes, add & poke in lemon slices & bake for 20 mins or until fish is just cooked.

Suggestion & Tips

Most white fish will work well.
