Ingredients & Prep

Beef stewing stake cut 2cm chucks
500 ml
Water
1 Onion large chopped
250 g
Tomato Passata
2 tbsp
Tomato puree
2 tbsp
Sweet paprika
1 tbsp
Balsamic vinegar
4 Garlic clove minced
2 Beef stock cube or gel pot
2 Bay leaf
2 tsp
Light brown sugar
1 tsp
Freshly ground black pepper
1/2 tsp
Caraway seeds ground
1/2 tsp
Oregano dried
3 tbsp
Olive oil
Garnish
to taste
Sour cream or yogurt (optional)
sprinkle
Fresh flat-leaf parsley chopped
Method
Step 1
In a lidded saucepan or casserole add the olive oil & over a med/high heat brown the beef chunks in batches, when all done add onion & garlic & cook for 2 to 4 mins to soften.
Step 2
Next add caraway, black pepper, paprika & oregano, stir in then add water, stock cube, vinegar, sugar, tomato passata, puree & bay leaf, stir place the lid on & simmer on the lowest heat for 2 hours giving it a stir now & then.
Step 3
Place yogurt & parsley in separate bowl for diners to hep them selves.
Suggestion & Tips
Good with pasta or mashed potatoes or chips.
