Ingredients & Prep

   600 ml  Hot water
   500 g  Chicken thigh cut into strips
   300 g  Raw prawns de-shelled
   250 g  Short grain rice
   130 g  Chorizo cut into thin slices
   100 ml  White wine
   80 g  Frozen peas
   1 g  Red sweet/bell pepper cut in half then sliced
   1 Onion med brown finely chopped
   1 Chicken stock cube or gel pot
   4 Garlic cloves grated
   2 tbsp  Tomato puree
   1 tbsp  Sweet paprika
   1 pinch  Saffron
   1/2 tsp  Freshly ground black pepper
   3 tbsp  Olive oil

Method

  Step 1
In a jug add hot water, stock cube & mix to dissolve, then stir in saffron & set aside.
  Step 2
In a good sized lidded frying pan add the oil, place on a med heat & fry off the sliced chorizo until crispy on both sides, then remove, add onion, garlic & chicken, fry off for 5 mins until cooked, add wine & tomato puree, stir & reduce liquid by half, then add rice, paprika, red pepper & saffron stock water, mix well & cook for 10 mins with a lid on.
  Step 3
Next remove the lid stir & reduce liquid to just wet if any left, add prawns, peas & black pepper mix in, place the lid back on & cook for a further 5 minutes.
  Step 4
Take off the heat & let it rest for 3 minutes, then serve.

Suggestion & Tips

You can add some mussels or clams if you like. You can garnish with fresh chopped parsley & lemon wedges too.
